Cardamom
is one of the most important spices in the world. Essential in Indian curries, dhals,
and the spice mixture garam masala. Scandinavians use it liberally in pastries.
The leaves emit a wonderful spicy-cinnamon scent when rubbed, hence its use in perfumery.
Makes an attractive and fragrant house plant. Blooms infrequently, however. Grow in
rich, moist, well-drained soil in the shade.

This
plant is a perennial only until the cats find it, and they proceed to chew on it, roll in

One of the essential
ingredients in the Middle Eastern spice blend zaatar. The leaves of this
dense, low growing plant have a delightfully spicy bite. It holds its flavor very well
when dried. Used with the other zaatar herbs (Syrian Oregano and Zaatar
Rumi) it makes an excellent meat and poultry rub. Also very good mixed with olive oil as a
dip for Middle Eastern flat bread. Needs well drained soil. Beautiful

Echinacea
is perhaps the most important of all indigenous American medicinal plants, and very highly
regarded in Europe as well. All parts of the plant were used medicinally by the Plains,
