A
fascinating onion! Appealing because it's a perennial bunching onion, so you never
have to replant it. Plant a few, and you'll never bother with mundane 'green onions'
again. The very large, hollow scallion-like stems have great flavor, and can even be
stuffed with an herb cream cheese. Or blanch (cover with dirt) the lower parts of the
stems and use like leeks. Called a 'walking onion' because small bulblets appear on the
tops of stems, and as they mature they fall over to the ground and root, starting a new
plant. In this manner, they walk around the garden! Highly recommended!

friend whose great aunt brought it over on a ship when she came to America from Italy. The
plant has been regarded as a treasured heirloom in her family for generations, and she has
allowed us to share it with our customers. Excellent flavor!

One of the essential ingredients in the Middle Eastern
spice blend zaatar. This plant is also called "True Zaatar".
It has a very spicy oregano flavor. Its a delicious treat sprinkled over hot
pizza. Used with the other zaatar herbs (Conehead Thyme and Zaatar
Rumi), it is fantastic mixed with olive oil and brushed over a flat bread like pita bread
and then quickly broiled. This is also the ezov, or hyssop mentioned in the Bible.
The branches of this plant were used to sprinkle the blood of the lamb on the doors for
Passover (Exodus 12:21-22), and to present the vinegar-soaked sponge to Christ just prior
to his death (John 19:28-30). A truly historic herb. Needs well drained soil. Very rare!
